The very simple way to make it...
Warm the meatballs either in their ovenproof packaging or in a saucepan
Add 3 meatballs per serve into a warm ovenproof serving dish
Carefully crack an egg into the middle of the bowl
Bake for 4-5 min
Add 3 goats cheese cubes to the sauce between the meatballs
Bake for an additional 4-5 minutes, until eggs are cooked to your liking and the goats cheese is warmed
Pop some parsley or basil on top, serve with bread, toast or a green salad.

150g (1 cup) hazelnuts, soaked in boiling water for 30 mins
1 clove garlic, chopped
2 cups vegetable stock
3 tbsp vegan butter (I used Earth Balance brand)
3 tbsp brown rice flour
1.5 cups water
Fresh nutmeg, grated
1 sprig rosemary, finely chopped
15 sage leaves, finely chopped
extra virgin olive oil
1 leek, finely sliced
10 medium (about 1.75kg) potatoes
sea salt and black pepper
2 tbsp vegan butter
10 sage leaves
Drain hazelnuts, add to a high speed blender with the garlic and vegetable stock; blend until completely smooth.
Melt the vegan butter, add the brown rice flour, cook for 1-2 mins on low heat, stirring constantly to prevent burning. Next, add the hazelnut milk, water + whisk constantly, until creamy. Stir in the grated nutmeg, rosemary + sage; remove from heat.
Preheat oven to 350F/180C. I used a 22cm x 22cm (9in x 9in) mudaustralia square vessel. Drizzle with olive oil + lay out the sliced leeks in an even layer. Drizzle leeks with olive oil, season them with sea salt + black pepper. Add a few spoons of the hazelnut cream over the leeks + smooth with the back of a spoon. Thinly slice potatoes using a mandoline or sharp knife (a mandoline makes this job SO much quicker). Pick up a handful of potatoes, organizing them into a neat stack, + lay them in the dish with their edges aligned vertically. Continue placing potatoes in the dish, working around the perimeter + into the center until all the potatoes have been added. The potatoes should be very tightly packed. Pour the hazelnut cream over the potatoes, drizzle with olive oil + season with sea salt + black pepper. Cover with foil + bake for 1 hour. After 1 hour, remove the foil, increase the oven to 450F/230C, bake for another 15-20 mins, until potatoes are crispy.
Melt the vegan butter, add the sage leaves. Stir until the butter turns golden colour and the leaves are crisp. Top gratin with crispy sage and burnt butter. ...
